Sulphoraphane is an isothiocyanate formed when the precursor glucoraphanin, concentrated in broccoli sprouts and other cruciferous vegetables, meets the enzyme myrosinase. It works primarily by activating NRF2, a transcription factor that switches on the body's antioxidant and detoxification defences.
